การศึกษาเห็ดภูฐานบ้านกระทุ่มล้มเพื่อพัฒนาบทปฏิบัติการวิทยาศาสตร์สำหรับนักเรียนชั้นมัธยมศึกษาปีที่ 2

บทคัดย่อ
การวิจัยในครั้งนี้มีวัตถุประสงค์เพื่อ 1) ศึกษาองค์ความรู้ทางวิทยาศาสตร์ที่เกี่ยวกับเห็ดภูฐานบ้านกระทุ่มล้มในด้านพฤกษศาสตร์ การปลูกและเพาะเลี้ยง การตรวจสอบสารอาหารและการแปรรูป 2) สร้างบทปฏิบัติการวิทยาศาสตร์ เรื่อง “เห็ดภูฐานบ้านกระทุ่มล้ม” ให้มีประสิทธิภาพตามเกณฑ์ และ 3) ศึกษาผลการทดลองใช้บทปฏิบัติการวิทยาศาสตร์โดยพิจารณาจากผลสัมฤทธิ์ทางการเรียนและทักษะกระบวนการทางวิทยาศาสตร์ของนักเรียน กลุ่มตัวอย่างที่ใช้ในการวิจัย คือ นักเรียนชั้นมัธยมศึกษาปีที่ 2/1 โรงเรียนบ้านกระทุ่มล้ม ภาคเรียนที่ 2 ปีการศึกษา 2556 จำนวน 35 คน ที่ได้มาโดยการสุ่มแบบกลุ่ม เครื่องมือที่ใช้ในการวิจัย คือ 1) บทปฏิบัติการทางวิทยาศาสตร์ 2) คู่มือประกอบบทปฏิบัติการวิทยาศาสตร์ 3) แผนการจัดการเรียนรู้ประกอบบทปฏิบัติการทางวิทยาศาสตร์ 4) แบบทดสอบผลสัมฤทธิ์ทางการเรียนและ 5) แบบทดสอบทักษะกระบวนการทางวิทยาศาสตร์ที่สร้างโดยผู้วิจัย สถิติที่ใช้ในการวิเคราะห์ข้อมูล ได้แก่ ค่าร้อยละ ค่าเฉลี่ย ส่วนเบี่ยงเบนมาตรฐานและการทดสอบที
ผลการวิจัยพบว่า
1. ได้องค์ความรู้ทางวิทยาศาสตร์ที่เกี่ยวกับเห็ดภูฐานบ้านกระทุ่มล้มในด้านพฤกษศาสตร์ การปลูกและเพาะเลี้ยง การตรวจสอบสารอาหารและการแปรรูปที่สอดคล้องกับมาตรฐานการเรียนรู้ ตัวชี้วัด และสาระการเรียนรู้วิทยาศาสตร์
2. บทปฏิบัติการวิทยาศาสตร์ เรื่อง เห็ดภูฐานบ้านกระทุ่มล้ม โดยมีประสิทธิภาพตามเกณฑ์
3. ผลสัมฤทธิ์ทางการเรียนและทักษะกระบวนการทางวิทยาศาสตร์ของนักเรียนหลังเรียนสูงกว่าก่อนเรียนอย่างมีนัยสำคัญทางสถิติที่ระดับ .01

ABSTRACT
The objectives of this research were to: 1) study the scientific knowledge of “Bankrathumlom Bhutan Mushroom” on botany, cultivation, plant breeding, nutritional examination and nutrition in food processing, 2) construct science laboratory direction on Bankrathumlom Bhutan Mushroom to meet the set criterion and 3) study the experimental results using science laboratory direction based on learning achievement and science process skills. The samples derived by cluster random sampling were 35 Mathayomsuksa 2 students of Bankrathumlom School studying in the second semester of the academic year 2013. The instruments constructed by the researcher were 1) science laboratory direction, 2) science laboratory manuals, 3) science lesson plans, 4) achievement test and 5) science process skills test. The data were analyzed through percentages, mean, standard deviation and t–test.
The findings of the research were as follows:
1. The body of scientific knowledge of Bankrathumlom Bhutan Mushroom on botany, cultivation, plant breeding, nutritional examination and nutrition in food processing was correlated with content standards, key performance indicators in science and science learning content.
2. The science laboratory direction on Bankrathumlom Bhutan Mushroom met the set criterion.
3. The students’ learning achievement and science process skills after learning were higher than that of before with statistical significance at .01.
